I’ve been making pizza now for ten years but only in a conventional oven, maxing out at 280 degrees Celsius. Sure, I’ve found work arounds to make my pizza somewhat authentic but never have I ever felt the result was worth all the effort.
After picking up, unpacking, setting up and then grabbing a new gas bottle, it didn’t leave us with much time to get our dough ready. My first cook was based on dough I’d prepared in 2 hours and it was still great, better than anything I’d pulled off with our oven at home.
It took me 2-3 cooks before mastering the KilnR and I now make roughly 10 pizzas per cook in 1-2.
We start our meals as a family once the oven is at 450 degrees’, we then sit, laugh, cook and pig out for 2-3 hours straight on the best pizza in Sydney.
You truly can make a pizza taste good in a couple of hours when you have 500 Degrees. I’ve tried polish the night before, frozen dough, dough made in 2 hours, store bought dough and everything, I mean everything is fantastic. Variations in leoparding are noticeable across the different methods of preparing dough but no matter which method, it is always delicious.
Timber Ovens: The reality of burning timber for us would mean we wouldn’t get around to cooking pizza as much as we’d like… so for us gas is the only way. We know a few families who purchased large wood fire pizza ovens for their backyards and in the years of ownership have failed to get more than 2-3 uses out of it (sheer pain of getting it started).
After researching and looking into pizza ovens of this type, for almost a decade now, it really wasn’t the right time to pull the trigger for us as we are in between homes. But we are thrilled that we did. This oven has no functional flaws, it is for us just perfect. If I want to use the rotating stone I can, if I want to rotate the pizza manually I can. The unit allows me to easily cook a 16inch pizza and has a great size opening at the front. It is not overly large (35kg) and whilst it is not designed to be portable it can still easily be moved around.
The results I’m getting with my pizza are just brilliant and the number of times we’ve eaten together as a family over the past month is more than we had in the past 6 months. Pizza is made with love and should be shared with loved ones and that’s what this oven has brought to our table.
I could say my only regret is not having bought one a long time ago but it was in that time that I strived to make a good pizza at home that I readied myself for the KilnR.
The only thing left to learn, by the time I finally bought my pizza oven, was how to launch a pizza, and then to become one with my oven.
The learning process led to flames, and most of our pizzas catching on fire. At least that’s how it played out during our first two cooks. We had so many laughs learning to use our oven and even though our pizza is perfect now, we still reminisce about the first two sessions. I even singed my eye brows and lashes by blowing into the oven, you know, whilst trying to blow burnt semolina away – don’t do that! watch the movie Backdraft for an explanation why.

I have nothing negative to say about how this oven cooks pizza. The burner is brilliant, as is the rotating stone. That this has a burner below the stone, well that is truly a bonus as it helps get the stone to temperature and evens out your pizza below and above while simply giving you total control.
The only negative is you have to be careful if you care about scratches around the mouth/opening as the paint is very delicate and scratches easily when you hit it with the pizza peel. I’m not concerned about this anymore as it demonstrates character.
I’d say…a perfect looking oven probably hasn’t made a perfect pizza.
